No knead bread really needs a clay pot or something to 'climb' up as it bakes, which I didn't have, but it tasted pretty good anyway.

French bread is the true challenge, though.

Pizza stones are wonderful for baking anything that you want to be crisp, they make excellent roasted potatoes.

Also they are quite good at regulating the temperature and heat conductivity of the oven (you know how most ovens have some hot spots, a pizza stone takes care of that).  I keep a stone pan in my oven at all times, and it really does make a difference in how nicely the oven works.

Celiac disease has been widely known nowadays and made people avoid wheat and think that it is bad for health. However, there is just an ingredient in wheat that causes that kind of disease and there are already specially made wheat that is made to avoid celiac disease.
