Marinated Tomatoes and Onions with Fresh Mozzarella

OK, last week Outy mentioned eating tomatoes and fresh mozzarella, but I don't remember where we were talking about it.
So, I thought it sounded really tasty, so when I got groceries Saturday morning, I got some fresh mozzarella.  The kind I got had cilantro and jalapenos on it, in a vacuum seal package, but it was on sale for 40% off, so that is the one I bought, even though I would have preferred plain to try.
I think this salad would be good with feta cheese too.
We had this for dinner yesterday.

 Tomato-And-Onion Salad
1/4 cup olive oil
1- 1/2 tablespoons balsamic vinegar
1/2 teaspoon salt
1/4 teaspoon sugar
1/4 teaspoon pepper
4 large tomatoes, thinly sliced
1 medium sweet onion, thinly sliced
1/4 cup chopped fresh basil
Whisk together first 5 ingredients in a large bowl. Arrange tomato and onion slices in rows in a serving dish. Sprinkle with chopped basil, and drizzle evenly with marinade. Cover and let stand at room temperature for at least 2 hours.

Alternative:
Add fresh mozzarella cheese, feta, or blue cheese.

Sounds really yummy. I have wanted to try my hand at making my own Mozarella. I just have not had the time. I bought the rennet on line. There are websites out there that tell you how to make it.

Making cheese would be interesting, but right now making yogurt and kefir are keeping me busy.
I have noticed rennet at the health food store.

Tomatoes (especially beefsteak) and Mozzarella are an Insalata Caprese, add sliced avocado for an Insalata Tricolore.

my mum occasionally makes 'cheeselets'  with milk rennet and salt.  this is like ricotta which is then scooped into little baskets and allowed to  drain.  they will decrease in size drastically.  a litre of milk will only make 4 or 6 cheeselets.  they can be eaten fresh and soft or dried plain or with pepper.  you can also buy them.  mum's are always eaten fresh - she's never tried drying them.
